Barrel aging is at the heart of rum making. It is the stage where a clear spirit begins its transformation into a refined and characterful expression.
At Antigua Distillery Limited, aging is an essential stage in the journey of every rum. The longer the spirit remains in oak, the more it evolves, revealing layers of flavour and complexity that define the final expression.

The Influence of Oak and Environment
Our rums are aged in carefully selected oak barrels, many of which have previously held American bourbon. These barrels are charred on the inside, allowing the spirit to extract rich flavours and develop greater depth over time.
As each barrel is filled, a handful of oak chips is added to enhance the interaction between the oak and the rum. Once filled, the barrels are sealed, labeled by batch, and dated. Every barrel matures uniquely, shaped by environment and position, creating distinct profiles essential to blending.
Time, Patience, and Transformation
Aging begins at a minimum of two years, with some rums maturing for far longer. As time passes, the spirit becomes smoother and more integrated, gradually developing richness and depth.
During this process, a small portion of the rum is lost to evaporation, often referred to as the “angel’s share.” While this reduces volume, it concentrates the flavours within the barrel. At Antigua Distillery Limited, this stage is guided by patience, allowing the spirit to be shaped, refined, and ultimately transformed into rum.
