The Art of Refining Spirit
Distillation is the stage where the character of rum begins to take shape, transforming a fermented base into a clean and structured spirit.
With careful control and expertise, our distillation process removes impurities while preserving the subtle characteristics developed during fermentation, resulting in a clean, balanced spirit.
Our Distillation Process
At Antigua Distillery Limited, the transformation from fermented molasses to rum is both a science and a craft shaped over generations. While modern methods have evolved, we remain committed to traditional copper distillation, preserving the character and integrity of our spirits.
The choice of equipment plays a defining role in shaping the rum. Copper interacts with the spirit during distillation, helping to remove unwanted compounds while enhancing smoothness and depth of flavor.
Phase 1: The Transformation
Once fermentation is complete, the liquid is transferred to the stills for distillation. The process begins with the “wash”, a gently fermented blend of molasses and water with a light alcohol content.
1. Vaporization
The wash is piped into the top of our analyzing column. As it descends over a series of heated plates, it meets rising steam.
2. The Separation
Because alcohol boils at a lower temperature than water, it vaporizes instantly, rising through the column while leaving the water and solids behind.
3. Rectification
This alcohol-rich vapor travels into the rectifying column, where it is cooled and condensed back into a high-proof liquid.
Phase 2: Defining "The Mark"
The crystal-clear spirit that emerges from our still is known as the “mark.” At this stage, the spirit is approximately 95% alcohol.
Despite its high strength, this liquid holds the concentrated essence of the Caribbean, the floral, fruity, and spicy notes developed during fermentation. Every batch of “the mark” undergoes a dual-verification process:
• Sensory Evaluation
Expert tasters analyze the aroma and "nose" of the spirit.
• Laboratory Analysis
Precise chemical testing ensures consistency and purity.
The Journey to the Barrel
Once the mark is approved, it is moved to our stainless steel holding tanks before its final evolution. From here, it is transferred into hand-selected charred oak barrels to begin the slow, tropical aging process.
Under the Caribbean sun, the clear “mark” will eventually emerge as the deep, golden, and complex spirits known worldwide as Cavalier and English Harbour.
